Easy Creamed Cornbread Casserole Recipe

Wondering what to bring to a potluck can make anyone feel anxious—especially if you don’t feel super confident in the kitchen. Now, it’s certainly okay to grab a pre-made dish at the supermarket if cooking isn’t your strong suit. But, wouldn’t it be awesome to show up to a Friendsgiving potluck with a kick-ass side dish that was not only EASY for you to make, but takes less than 5-minutes to prepare and has everyone fawning over? If you are looking for a seriously delicious potluck recipe you have to give this easy creamed corn casserole a try!

What’s In Creamed Corn Casserole?

Casseroles are known for being super simple to make, and this creamed corn casserole is no different. It’s only 6-ingredients! Here’s what you need…

  • Jiffy Cornbread
  • Eggs
  • Melted Butter
  • Whole Kernel Corn
  • Sweet Corn, Cream Style
  • Sour Cream

That is literally it!

How To Make Creamed Corn Casserole

After making this casserole, you’ll never wonder what to bring to a potluck again. It’s so easy and fast to make it will quickly become your go-to potluck recipe! Here’s how to make it…

  1. Add all your ingredients to a bowl and mix with a wooden spoon.
  2. Transfer to a large baking dish and cook for 1 hr to 1 hr 20 min.

THAT IS IT! It’s hard to believe this recipe is THAT simple!

Creamed Corn Casserole

  • 2 boxes Jiffy Cornbread Mix
  • 4 eggs
  • 2 sticks unsalted butter (melted)
  • 2 cans whole kernel corn (drained)
  • 2 cans sweet corn, cream style
  • 2 cups sour cream
  1. Preheat oven to 350 degrees.

  2. Add the first 5 ingredients in a large mixing bowl and mix. Add the sour cream last.

  3. Pour mixture into a large baking dish sprayed with non-stick cooking spray.

  4. Cook for 1 hr to 1hr 20 min until the top is golden brown.

This recipe is designed to serve a large group. You can easily cut the recipe in half to fill an 8×8 pyrex dish for smaller groups.
